Happy Groundhogs Day !

punxsutawney-phil.jpg

Fun Facts About Groundhogs

The average groundhog is 20 inches long and normally weighs from 12 to 15 pounds. Punxsutawney Phil weighs about 20 pounds and is 22 inches long.

Groundhogs are covered with coarse grayish hairs (fur) tipped with brown or sometimes dull red. They have short ears, a short tail, short legs, and are surprisingly quick. Their jaws are exceptionally strong.

A groundhog’s diet consists of lots of greens, fruits, and vegetables and very little water. Most of their liquids come from dewy leaves.

 A groundhog can whistle when it is alarmed. Groundhogs also whistle in the spring when they begin courting. { You know us  guys like to whistle at women  ;)  }

Insects do not bother groundhogs and germs pretty much leave them alone. They are resistant to the plagues that periodically wipe out large numbers of wild animals. One reason for this is their cleanliness.

Groundhogs are one of the few animals that really hibernate. Hibernation is not just a deep sleep. It is actually a deep coma, where the body temperature drops to a few degrees above freezing, the heart barely beats, the blood scarcely flows, and breathing nearly stops.

Young Groundhogs are usually born in mid-April or May, and by July they are able to go out on their own. The size of the litter is 4 to 9. A baby groundhog is called a kit or a cub.

A groundhog’s life span is normally 6 to 8 years. Phil receives a drink of a magical punch every summer during the annual Groundhog Picnic, which gives him 7 more years of life.

Well Ole Punxsutawney Phil America’s favorite February 2nd rodent saw his shadow today and therefore six more weeks of Winter, what a load of groundhog droppings shadow or not Phil there would be six more weeks of winter. Must have been a bunch of liberal democrats that came up with this day…  ;)

Red Lentil Soup w/ Lemon

This was in the local paper recently and I thought I’d share with ya’ll

RED LENTIL SOUP WITH LEMON
3 tablespoons olive oil, more for drizzling

1 large onion, chopped

2 garlic cloves, minced

1 tablespoon tomato paste

1 teaspoon ground cumin

1/4 teaspoon kosher salt, more to taste

1/4 teaspoon ground black pepper

Pinch of ground chili powder or cayenne, more to taste

1 quart chicken or vegetable broth

1 cup red lentils

1 large carrot, peeled and diced

Juice of 1/2 lemon, more to taste

3 tablespoons chopped fresh cilantro

In a large pot, heat 3 tablespoons oil over high heat until hot and shimmering. Add onion and garlic, and sauté until golden, about 4 minutes. Stir in tomato paste, cumin, salt, black pepper and chili powder or cayenne, and sauté for 2 minutes longer. Add broth, 2 cups water, lentils and carrot. Bring to a simmer, then partially cover pot and turn heat to medium-low. Simmer until lentils are soft, about 30 minutes. Taste and add salt if necessary. Using an immersion or regular blender or a food processor, puree half the soup; it should be somewhat chunky. Reheat soup if necessary, then stir in lemon juice and cilantro. Serve soup drizzled with good olive oil and dusted lightly with chili powder if desired.

Makes 4 servings.

There have been times when they roost on the rail of the deck until they catch they eye of my four legged pal magic. I’ll have to take a picture to post of them in the future there are days I have seen as many as 3o of them out back… someday if they get to fwendly one may end up as dinner..
