Gringo Geraldo’s Wetback Pie

You will need

1 lb ground beef or turkey

1 can refried beans

1 small onion( diced)

1 can of green chilies (diced)

1 can of enchilada sauce

4 to 5 8” flour tortillas

2 cups shredded Monterey Jack Cheese

1 Package taco seasoning

8” round cake pan

 

 

Begin by browning beef or turkey in a skillet with chopped onion and diced green chilies. Add package of taco seasoning drain off fat. Preheat oven to 350 degrees. Take the 8’ cake pan and put a small amount of enchilada sauce in bottom , place a flour tortilla on the bottom  and add couple good spoonfuls browned meat. Add a good couple of spoons of refried beans some cheese and a small amount of sauce. Repeat steps until reaching the top of pan finish with a flour tortilla .Pour remaining enchilada sauce and top with cheese. Bake in oven covered with foil for about 35 minutes until bubbly, remove foil, cook another 10 minutes. Cut into wedges like a pie serves four.

Top with sour cream if desired.. Enjoy :P

  1. Sounds good - but why go to the trouble of layering it in a pan and baking in the oven? Just brown the meat, add seasoning and sauce. The take the tortillas, slap on some beans, spoon in the meat, top with cheese & sour cream, roll up and EAT!

    But then it wouldn’t be wetback pie then now would it :P
